It's a large-volume pre-mixed that is bursting with flavours associated with holiday season, which makes it perfect for hosting a festive gathering. Any leftover syrup for breakfast cocktails, desserts, or to mix another batch of the drink.
Bikini Recipe
Yields 10 guests
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Put all the components inside a pot, heat until it reaches a light boil, agitating to dissolve. After that, take off the heat allowing it to cool down fully. Pour into an sealable bottle, close it and refrigerate it in the fridge, it can be stored for around four weeks.
Preparing the Cocktail Base: Mix every spirits and syrup in a sizeable container, allow it to infuse for an hour, then pass it through preferably using a fine cloth, making it perfectly clear.
For serving: Pour 85ml of your cocktail base into your cocktail shaker packed with ice, gently stirring lightly for about 60 seconds to cool it down. Strain into a cold coupe glass or a similar vessel, top with a few cranberries and finish using a light spray of the essential oil over the drink.
